  • 50 g Sbrinz AOC, grated
  • 120 g wholemeal spelt flour
  • 4 eggs
  • 70 g serac (Séré) white cheese
  • 200 ml water
  • 100 ml milk
  • 20 g melted butter
  • Salt and pepper
  • 2 tbsp. butter for cooking
  • 1 bunch baby carrots
  • 150 g snow peas
  • 12 small white onions
  • 12 button mushrooms
  • 60 g butter
  • 1 tbsp. sugar
  • 1 tbsp. water
  • 1 dash lemon juice
  • Salt and pepper
Spelt Wheat Vegetable and Sbrinz AOC Crêpes

DIRECTIONS:

Carefully mix all ingredients for crêpe batter.

Let stand 30 minutes.

Peel and wash vegetables.

Leave carrots whole, thinly slice snow peas, and cut white onions in half lengthwise.

Peel mushrooms, do not chop.

Melt butter in pan and dissolve sugar.

Add vegetables and lightly glaze.

Deglaze with water and lemon juice.

Season and steam, covered, over low heat.

Add a little water if required.

Cook small crêpes in hot butter. Fold and serve with vegetables.

Cover with sauce and sprinkle with Sbrinz AOC.
