  • 300 g frozen, seasoned mixed vegetables
  • 1 packet (2 to 3 servings) instant mashed potato powder
  • 200 g Swiss Raclette
  • Fresh ground pepper
  • 1 bunch chives, coarsely chopped
Vegetable and Potato Casserole

DIRECTIONS:

Defrost frozen vegetables in microwave.

Prepare instant mashed potatoes according to package directions and divide among two small gratin or soup dishes. Cut Swiss Raclette into strips and use half to garnish mashed potatoes.

Spread vegetable mixture on top and garnish with remaining cheese.

Microwave on high for 1 to 2 minutes until cheese melts and vegetables are heated through.

Season, sprinkle with chives, and serve immediately.
